Short summary
The CAPN1 gene was selected as a target gene to identify single-nucleotide polymorphisms (SNPs) and see if SNPs significantly affect meat quality in Bali cattle. Three SNPs in the CAPN1 gene were associated with ultrasound marbling and intramuscular fat, pH, tenderness, meat color, and fatty acid in Bali cattle. The CT genotype differed significantly from those of CC and TT genotypes in the gene expression result. CAPN1 gene polymorphisms could be used as markers for meat quality in Bali cattle.
